Frittata's

As I am slowing moving into my new life as a wife I am finding joy in things that I never have really LOVED until now! One thing I have become slightly obsessed with is cooking. I love looking up recipes, trying new things, and tasting food that I made on my own. It may have something to do with the fact that I was blessed with many great kitchen appliances, pots and pans, and gadgets for my bridal showers, they definitely make cooking easier! On that note, here is a great recipe.



Asparagus and Mushroom Frittata


1 tablespoon butter
3 tablespoons olive oil
1/2 pound fresh asparagus cut into 1/2 inch pieces
1/2 pound fresh mushrooms, sliced
6 eggs (I used 3 eggs and 3 egg whites)
1 tablespoon water
1 teaspoon fresh thyme
1/2 cup cheese (any kind really)


1. Preheat oven to 325 degrees
2. Melt butter and add olive oil and asparagus to an oven safe skillet over medium heat
3. Cook till tender then add mushrooms and cook 5 more minutes
4. In a medium bowl whisk eggs, water, and thyme. Pour into the skillet and reduce heat to low. Cover and cook 5 minutes
5. Transfer the skillet to the oven. Bake 10-15 minutes, until eggs are no longer runny. Top mixture with your cheese and keep in oven until cheese is melted and browned

This recipe is great for a quick meal! It only takes 10 minutes to prepare and its done in 30 minutes or less! It tasted great! Mark and I were not huge fans of the thyme in it but overall it was great! I also made a breakfast frittata for Mark, his mom and Stephanie and it was sooooo good. I used turkey bacon (just cut and cook the bacon and then continue with the recipe) You can really put anything you want in it. If you try it, let me know how you like it!
